From South Africa to Bali: Chef Damian Pentelow Ignites Padma Resort Ubud’s Dining Scene

Elevating its dining experience, Padma Resort Ubud is thrilled to introduce its new Executive Chef, Damian Pentelow, whose unique culinary vision and journey bring fresh inspiration to the award winning resort’s dining scene. Rooted in the traditions of his South African childhood, Chef Damian’s passion for cooking grew from the warmth of his  grandmothers’ kitchens and the art of “Braai”. Derived from the Afrikaans word that means grill or roast, Braai refers to grilling food in open flames, it is also a social setting, which brings people together to enjoy food, drinks, and good company around the fire. This early foundation in bold, fire-infused flavours has become the heart of his culinary style. It beautifully resonates with Indonesia’s traditions, which highlight the joy of togetherness through food, such as makan tengah (shared meals) and arisan (social gatherings). We are delighted to welcome the vibrant spirit of South African culture into the resort.

Damian’s career took off in the fine dining restaurants of South Africa, followed by an enriching tenure on the luxury cruise liner. He later took on a Head Chef role at a popular tapas bar in South Africa, which eventually led him to eight adventurous years with Club Med across Southeast Asia. In 2018, he was promoted to Executive Chef, becoming the youngest to hold this position in Club Med’s APAC region, showcasing his dedication and talent.

At Padma Resort Ubud, Chef Damian is set to bring his philosophy of honouring simplicity and origin through vibrant, globally inspired flavours. He envisions an elevated yet relaxed dining experience that reflects the organic harmony of Ubud’s lush landscapes. “Learning is continuous,” Damian shares. “I gain insights from books and, importantly, from my team. The kitchen is a place of endless knowledge.” Looking forward, Chef Damian is excited to contribute to Padma Resort Ubud’s legacy of memorable dining while celebrating Bali’s evolving fine dining scene. With talented chefs converging on the island, he sees a bright future for culinary innovation in Bali.
